  1. Fillet and wash crappies. Let drain in sifter for a few minutes to remove excess moisture
  2. In a separate bowl put in about 1 cup of cornmeal.
  3. In a deep fryer [I use a Fry Daddy ] heat about 2 quarts veg. oil to about 400 degrees [I like to use Cranola oil]
  4. In a separate dish beat up 1 egg real good
  5. Now dredge the fillets in the egg and then in the corn meal and put in the deep fryer.
  6. Let cook for about 3 or 4 minutes or till fish floats and turns golden brown.
  7. Next move is to lock all doors and pull down all window shades.
  8. Serve with french fries and Campbell’s pork and beans.
  9. Wash down with a cold glass of Jersey Cocktail.
