- Fillet and wash crappies. Let drain in sifter for a few minutes to remove excess moisture
- In a separate bowl put in about 1 cup of cornmeal.
- In a deep fryer [I use a Fry Daddy ] heat about 2 quarts veg. oil to about 400 degrees [I like to use Cranola oil]
- In a separate dish beat up 1 egg real good
- Now dredge the fillets in the egg and then in the corn meal and put in the deep fryer.
- Let cook for about 3 or 4 minutes or till fish floats and turns golden brown.
- Next move is to lock all doors and pull down all window shades.
- Serve with french fries and Campbellās pork and beans.
- Wash down with a cold glass of Jersey Cocktail.
